Molino Grassi Andina flour is an all-organic blend of wheat, spelt, and quinoa flour. Spelt is one of the oldest wheat varieties that performs just like all-purpose flour but delivers unique, mildly nutty flavors. Loaded with dense nutrition, you can even combine it with other flours to lighten the taste. All of their flours act as a Safer Gluten, not triggering eaters who identify as intolerant or sensitive to gluten.

Italian flour is exceptional when it comes to grade specialization and unique gluten content. They’re graded by the law to measure content, grind, and other specifications, giving cooks the ability to choose flour composition easily. Italian flour is usually made from soft or hard wheat, also called durum. Durum wheat flour has yellow undertones and is ground more coarsely than soft wheat. The Italian grading system also includes the quality of grind - 2,1,0 and 00 types denominate flour from the coarsest to the finest grind.

Molino Grassi Andina type 1 flour is finer than typical type 2 flour. However, it’s less refined than 0 and 00 flour types. While 00 and 0 flour are the best for the long fermentation process to achieve an elastic texture, coarser grinds like type 1 and 2 flour have perfect bread-making properties, ideal for Focaccia, Pullman loaf, brioche, or sponge cakes.
