Made with our vegan dried macaroni and a handful of fresh ingredients, it’s proof that simple can still be packed with flavor. Perfect for lazy lunches, dinner parties, or anytime you’re craving something light and comforting.

- ½ cup extra virgin olive oil
- 1 whole lemon
- 4 peeled cloves of fresh garlic
- 2 tbsp fresh chopped Italian flat-leaf parsley
- 1 tbsp fresh chopped dill
- 1 tbsp fresh chopped chives salt and fresh ground pepper chili flakes, cayenne powder, or calabrian chilis (optional)
- shrimp or preferred protein (optional)
Directions
- Zest and juice the lemon. Set aside.
- Press the garlic cloves using a garlic press and set aside.
- Chop the fresh herbs and set aside.
- Heat the olive oil in a large skillet on medium heat. Add garlic and stir frequently until the flavors combine. Then, reduce the heat to simmer.
- Add lemon juice, zest, and fresh herbs to the pan.
- Add pasta to salted boiling water.
- Cook the macaroni, then use a pasta strainer to gently lift the pasta from the pot and place it directly into the pan.
- Toss the pan and gently incorporate the pasta, adding 2-3 tablespoons of pasta water to thicken the sauce if needed.
- If adding protein, cook it in the olive oil and garlic mixture first and add fresh herbs and lemon per the instructions above. Alternatively, add pre-cooked protein and incorporate it into the pan.
