Lemon, Garlic, and Fresh Herb Pasta

Made with our vegan dried macaroni and a handful of fresh ingredients, it’s proof that simple can still be packed with flavor. Perfect for lazy lunches, dinner parties, or anytime you’re craving something light and comforting.

Directions

  1. Zest and juice the lemon. Set aside.
  2. Press the garlic cloves using a garlic press and set aside.
  3. Chop the fresh herbs and set aside.
  4. Heat the olive oil in a large skillet on medium heat. Add garlic and stir frequently until the flavors combine. Then, reduce the heat to simmer.
  5. Add lemon juice, zest, and fresh herbs to the pan.
  6. Add pasta to salted boiling water.
  7. Cook the macaroni, then use a pasta strainer to gently lift the pasta from the pot and place it directly into the pan.
  8. Toss the pan and gently incorporate the pasta, adding 2-3 tablespoons of pasta water to thicken the sauce if needed.
  9. If adding protein, cook it in the olive oil and garlic mixture first and add fresh herbs and lemon per the instructions above. Alternatively, add pre-cooked protein and incorporate it into the pan.
