Creamy Corn, Lemon & Parmesan Summer Pasta

This recipe was originally created by @themamasco.naomi and features our fresh, organic pasta as the star of the show. It’s comforting, light, and filled with bright summer flavors — the kind of dinner that feels indulgent but won't weigh you down.

Ingredients:

  • 3–4 ears of fresh corn

  • 2 tbsp butter

  • 2 tbsp olive oil (lemon-infused if you have it — trust us, it’s worth it)

  • 1 shallot, finely chopped

  • 2–4 garlic cloves, finely chopped

  • Salt and pepper, to taste

  • A few tablespoons of all-purpose flour

  • ½ cup heavy cream

  • ½ cup milk

  • 1 package of Wildly Beloved Foods Pappardelle Undulate Medio - Spinach - Vegan - Fresh Pasta

  • Reserved pasta water

  • ½–1 cup grated Parmesan cheese

  • Chopped parsley and fresh lemon juice to finish

Instructions:

  1. Boil the corn until tender (about 5–7 minutes), then remove kernels from the cob.

  2. In a large pot, melt butter and olive oil over medium heat. If you’ve got lemon-infused oil, this is its time to shine 🍋.

  3. Add the shallot and garlic to the pot, cooking until soft and fragrant. Season with salt and pepper.

  4. Stir in a few tablespoons of flour, followed by the corn. Mix well.

  5. Slowly pour in the cream and milk, stirring constantly to create a smooth sauce.

  6. Meanwhile, cook the pasta according to the package instructions. Before draining, reserve a bit of pasta water.

  7. Add a splash of pasta water to the sauce, thinning it out slightly (it’ll thicken again once the cheese is added).

  8. Stir in the cooked pasta and Parmesan. Toss to coat everything in the creamy corn sauce.

  9. Finish with chopped parsley and a generous squeeze of lemon juice.

Optional: Add thick-cut bacon for a smoky twist. 😍


Make It Your Own

No lemon olive oil? Just squeeze a bit of fresh lemon juice in with the garlic and shallot for a hit of brightness. Want to up the protein? Grilled chicken or pancetta would be perfect here.
